Chicken Tinola
 
Description:  Main Dish

Ingredients:
1 Whole Chicken, chopped
1 Whole Unripe Papaya, sliced 
2 tbsp. ginger, cut into strips
1 pc. red onion, chopped
3 cloves garlic, pounded
1 cup water
peppercorns & salt or Patis 
3-5 pcs. long green chili 
2 cups leaves of chili plant 

Instructions:
Saute garlic, onion, and ginger.  When slightly browned, add chicken pieces and continue cooking until slightly cooked but not burned.  

Add water.  Water level should be just enough to cover the chicken.  Add peppercorns.  Simmer until chicken is tender.  Add papaya.  Simmer a few more minutes. 

When papaya is almost done, add leaves of chili plant and long green chili. Add salt.  When leaves of chili plant is cooked, your tinola is ready.

Serve hot with patis. 
Patis is fish sauce almost available in all Oriental stores.
