Chicken Adobo

Chicken Adobo is a famous Filipino main dish known for its longevity and resilience to spoilage.  The vinegar is a secret ingredient.  You may also use pork or beef for this recipe.

Ingredients:
1 regular sized chicken
1/4 cup soy sauce
1/4 cup vinegar
1/2 cup crushed garlic (use half portion for simmering)
1 tsp. whole peppercorns
2 tbsp. sugar
3 bay leaves
1/2 cup cooking oil

Instructions:
Clean and cut chicken into pieces.  Place chicken in a saucepan and add all the ingredients.  Add 1/2 cup of water and let simmer until tender.  When the meat is tender, set aside.  In another saucepan, saute garlic until golden brown then add your Adobo mixture.  Simmer for another 2-3 minutes for a more "garlicky" flavor. 

Serve hot with white rice. Makes 6 servings.

Variation:
If you are using pork for this recipe, you may saute the pork together with the garlic. When slightly browned, add the remaining mixture of your adobo and simmer for another 2-3 minutes. I sometimes add some fresh coconut extract for this recipe if I am coking chicken.
