Lumpiang Shanghai
 
Description:  Main Dish

Lumpia are to Filipinos, as the egg roll is to the Chinese.  A great finger food by itself or when accompanied by rice it is transformed into a satisfying main dish. 

Ingredients: (Lumpia)
3 pcs. medium onion, finely chopped
3/4 lb. ground pork
1/4 lb. shrimp, shelled & chopped
1 tsp. salt 
2 tsp sugar
1/4 tsp. pepper or to taste
8 12-inch rice paper rounds
Oil for frying 

Ingredients: (Dip)
1/4 cup white vinegar
2 cloves garlic, coarsely chopped
1/4 tsp. pepper 
Salt to taste

Instructions:
In a mixing bowl, combine pork, shrimp, onion, sugar, salt and the pepper. Mix thouroughly to form Lumpia mixture. 

Wrap every 1/2 tbsp. of mixture in lumpia wrapper or rice paper rounds. Fry in hot oil until golden brown.  Drain in paper towels then cut into equal pieces. Serve warm with vinegar dipping sauce. 

Variation:
Some just use catsup to go with this Lumpia recipe.  Instead of rice paper rounds, you may also use the molo or wonton wrapper.
