Pancit
 

Description:  Main Dish

Filipinos are known for their PANCIT, a dish of noodles mixed with a variety of vegetables and/or chicken, shrimp, beef pork.  It is unusual NOT to find pancit at the table during a Filipino party. 

Ingredients:
1/2 lb. chicken cut in bite-sized cubes
1/2 lb. pork cut in bite-sized cubes
1 tbsp. cooking oil
1 clove minced garlic 
2 pcs. onion, diced 
1 diced celery stalk
1/4 cup chopped cabbage head
1 carrot, peeled & chopped
8 ounces of rice cellophane noodles
salt & pepper to taste
1/4 cup chopped green scallions
1 lemon cut into wedges

Instructions:
In boiling water, cook chicken & pork cubes together until no longer pink. Drain meat.  Set aside broth.

Boil water and cook noodles per instructions on package. Set aside noodles.

Saute garlic & onion in cooking oil.  Stir in pork and chicken, followed by 1/2 of broth.  Once the mixture is brought to a boil, reduce the heat.

Add carrots & celery.  Cook for 7-10 more minutes.  Mix in noodles.  Add salt & pepper to taste.  Add additional broth as needed to fully cook the ingredients.

Makes 6-8 servings.  Serve with scallions and lemon wedges on the side.
